Rice and kateh are considered as one of the main foods of Iranians. Rice is cooked in two ways, drained and kateh. In the draining method, rice is boiled in boiling water and drained. Then it is brewed in a pot.

first stage
To prepare a delicious dami gojeh farangi at the beginning of the work, we wash the rice and soak it with a little water and salt for about 30 minutes to several hours. Note that the older the rice, the longer it should be soaked. Wash and peel the onion and chop it into small pieces. Heat a pan with a little oil.
second stage
Then let the oil heat up. Then add onion to it and fry until light and golden. Then add turmeric, salt and pepper and fry. We wash and peel the potatoes and cut them into gems.
third level
Pour 2/3 of it into the onions and keep the rest for tahdig. We fry the potatoes until they are fried and cooked. Then add tomato paste to it and saute until its raw smell is removed. We wash the tomatoes.
The fourth stage
Then puree them in a food processor. Then add to the ingredients and mix together and let it boil and get the rawness of the tomato. Then add the soaked rice and stir. We check its water.
The fifth stage
If the water is not enough, we add a little boiling water and let the rice cook and drain the water. Take another pot and pour oil, turmeric and salt on its bottom. We put the potatoes that we kept on the bottom of the pot.
The sixth stage
Then we pour the rice on the potatoes and smooth its surface. Then we put it to brew for about an hour on low heat. If the rice is dry, you can add a little water to it.
