Loobia polo in Persian language means green beans with rice. As it is obvious from its name, its main ingredients are green beans and rice. In the following, we are going to be familiar with some facts about them.

1.Soak the rice in water and salt for 1 to 3 hours then empty the water on it while cooking.
2. Pour the liquid oil into a saucepan and put it on medium heat.when the oil become hot pour the chopped onions and fry it until well golden brown.
3. Now pour salt,black pepper,Turmeric powder,Cinnamon powder into saucepan and immediately pour the chopped sheep tight.Saute them until they fried well.
4.You should add fresh and chopped green beans now and saute with other ingredients in saucepan.
5. At this time add tomato paste and let it fried in oil with other ingredients until give the color and the oil became somehow red.Now put it aside.
6.Pour water in a pot and put it on high heat.When it boils,pour the rice in it for 7 to 14 minutes until it is ready,then pour it in a colander and put aside.
7.Pick up a pan and pour oil in it.when it becomes hot cover the bottom of the pot with pieces of Lavash bread.
8. Now pick up the pot from heat and start pouring layer by layer rice and the prepared ingredients before,until the last layer that you should cover it by rice.
9. Put the lid on the pot and increase the heat until the rice steam rises.Now you should pour the brewed saffron on the rice and put the cinnamon stick on it and again put the lid on the pot.Then decrease the heat to low and let it cook for 45 minutes to 1 hour.
10. After cooking pick up the cinnamon stick from top of the rice,pour the rice into the Intended dish and decorate with saffron rice and Tahdig and serve.enjoy the taste of it.
