The story of Ash Shole Ghalamkar happened 150 years ago during the reign of Nasereddin Shah. The story is that the cholera disease was an epidemic in Tehran, and ironically, Shah Qajar also contracted this disease.

For the healing of King Hakim Bashi and the doctor, they tried every prescription, and it did not work. Therefore, the kitchen chef decided to save the king from his illness by cooking a delicious dish. For this reason, he prepared a soup full of side dishes and very nutritious, and by the way Shah Qajar recovered after eating a bowl of Ash shole ghalamkar and regained his lost strength.


In gratitude for the king's health, he was ordered to prepare 12 pots of Ash shole ghalamkar and distribute it among the city's people. This custom was repeated every year in the spring season, and little by little, Ash shole ghalamkar became popular among the people.

Necessary ingredients for preparing Ash shole ghalamkar

One and a half cups of lentils

One and a half cups of wheat

1 cup chickpeas

1 cup of white beans

Red beans 1 cup

Pinto beans 1 cup

1 cup of rice

Veal 1 kg

Marzeh and tarragon about 2 kilos

Sheep pen water about 1 liter

Hot onion 1 cup

Kermanshahi or Golden Laden oil in the necessary amount

Salt and turmeric as needed

Pepper as needed

2 tablespoons of brewed saffron

The steps of the recipe for the preparation of ash sholeh ghalamkar

first stage

To prepare this soup, we soak all the beans separately with water a day before and set them aside. We also chop the marzeh and tarragon after cleaning. We wash the vegetable and keep it aside until its juice dries completely.

Then, to cook the soup, we first chop the meat and put it on the heat with a little water until it is cooked completely. We also boil soaked peas and beans separately.

Third level

After the meat is cooked, we shave it. We drain the cooked peas and beans, mash them completely with an electric or hand blender, and set them aside.

The fourth stage

We also cook soaked wheat separately and grind it after cooking or crush it with a meat grinder and keep it aside.

The fifth stage

Now pour water into a large pot and heat until it boils. Then we add chopped vegetables to it. After a quarter of an hour, pour the soaked rice into the pot to boil and cook for a few minutes.

The sixth stage

Then we add the crushed peas and beans to the soup pot and stir until they dissolve in the water. Then we first dissolve the crushed wheat in some water, open it completely with a fork, and add it to the soup in several stages.

The seventh stage

Note that under no circumstances should you pour the crushed wheat into the soup at once because it will cause it to become lumpy and spoil the soup.

The eighth stage

From this point on, you must constantly stir the soup. Otherwise, the soup will stick and spoil. While stirring, we stir the hot onion, shaved meat, and broth into the pot.

The ninth stage

After it boils a little, we add salt, turmeric, pepper, saffron, and a little oil to the soup and stir it with low heat until it boils slowly and is completely absorbed.

Tenth stage

After the soup is completely cooked, turn off the heat and put the soup in a container. You can decorate the soup with hot onions.
