Persian Felafel is a very delicious Iranian fast food that is prepared from a combination of ground chickpeas with special spices, which is fried in oil and served with bread and other side dishes such as tomatoes and pickled cucumbers.
For 3 people
Chickpeas: 1/5 glass (clean and soak for 24 hours)
After 24 hours, drain and wash it and turn it into a paste with the following items. You can do this with a blender, mixer or meat grinder.

Coriander seeds: 1 teaspoon
Black cumin: half a teaspoon
Sweet paprika: 1 teaspoon

Some fresh parsley
2 tablespoons of chickpea flour
Mayonnaise: 4 tablespoons
Grape vinegar: 2 tablespoons

1.First, we soak chickpeas one day before making falafel. After a day, we wash and drain the chickpeas. After draining, pour the chickpeas into the mixer. I chop the onion and add it to the peas along with two cloves of garlic.
2. Then we add all the spices such as paprika and coriander seeds to fresh parsley to the mixer. We mix all the ingredients together. After mixing for a minute, add some chickpea flour to the mixture for better falafel strength and mix again.
3. In the same way, mix the ingredients until it becomes a paste. Then we remove the dough with a scoop and shape the dough by hand into the desired shape.
4. Pour the oil into the frying pan and let it heat up completely and add the falafels to the hot oil one by one.
5. After three minutes, our falafels will arrive. Take out the falafels and put them on a napkin and let the oil drain.
6. I make a very simple sauce with mayonnaise, grape vinegar and black pepper.
7. Serve the falafels in a baguette or lavash bread with pickled cucumbers, tomatoes, onions, parsley, lettuce and sauce or anything else you like as pickles and enjoy.
