Shirini gerdooee or Persian walnut cookie is an excellent and suitable pastry for Nowruz and welcoming guests. Nowruz is an ancient holiday for Iranians. In almost 30 days, we will reach Nowruz and I have already prepared this different recipe for you. I hope you get it and enjoy it.
150 grams of powdered or ground walnuts
200 grams of sugar
2 egg whites
300 grams of rice flour
1/2 tablespoon of cocoa powder
Baking powder 1/2 tsp
Vanilla 1/2 tsp
1 teaspoon of white vinegar
1. First, put all the ingredients in a suitable container and mix them thoroughly. The ingredients we had, such as walnut powder, egg whites, and sugar.
At this stage, we must mix the ingredients completely.
2. Then we put the pot on the gas. We put medium and very low heat. At this stage, we must stir the ingredients quickly and do not let it boil.
This step, where we intend to heat these materials, is called heating or heating. It usually takes between 5 and 7 minutes. Check with your finger every two minutes that the ingredients are hot.
3. The previous step was the most important and caused beautiful cracks in the cake. After 7 minutes, we take the pot off the flame, put it in another bowl, and add the rest of the ingredients such as cocoa powder, baking powder, and vanil to the dish.
I add a teaspoon of vinegar to the ingredients and mix again.
4. Next, I put all the dough that has reached the appropriate adhesion into the funnel. I put greaseproof paper on the bottom of the tray or grease it.
I put the dough in medium circles on the bottom of the tray.
5. After that, I put the tray in the oven which is set to 180 degrees for 10 minutes.
Because this pastry puffs up while cooking, you should place them at a distance so that they don’t stick together when puffed up.
6. Then after this period of ten minutes, our delicious walnut sweets are ready.
Let the trays cool and then separate the straws and put them in a suitable container and see the necessary preparations for the guests of Nowruz Eid.

Notes:
1.You can use a food processor, meat grinder, or grinder to grind walnuts. It is important to eat walnuts and it doesn't matter with what device it is eaten.
2.In the preparation of this sweet, a small amount of cake is used to strengthen the sweetness and create a special texture. Since this cake does not contain oil or fat, it is better to use low-fat cakes such as sponge cake, roll or chiffon cake, but use heavier cakes such as vanilla cupcake, cake Yazdi or packaged cakes. There is no problem with the supermarket. Never use biscuit crumbs instead of cake crumbs.
3.Vinegar is used in many cooking recipes. Using a small amount of vinegar makes the texture of the cake soft and spongy. Its acidity prolongs the life of sweets and balances the taste of sweets. In most recipes, vinegar is referred to as "white vinegar" and unfortunately, dark vinegars (date, red grape, and balsamic) cannot be substituted.
