Every year, a major part of Iranian sturgeon fish caviar is exported to other countries. In recent years, caviar export has become one of the most important sources of income for the country.


Although wild (sea) caviar usually has a better quality and a more delicious taste, due to the danger of extinction of this species of fish in the world, the consumption culture and market pressure have gone towards the production of farmed caviar.


In Iran, according to the final agreement between the Caspian Sea border countries, the ban on catching all kinds of sturgeon fish is on the agenda. According to the Fisheries Organization, Iran ranks fourth in sturgeon production in the world, which can reach higher ranks with more work and better planning.

What are the conditions of Iran's caviar export?

Due to the significant amount of caviar production by different companies in Iran, it is exported to all parts of the world in a significant volume. However, the export of any product, including caviar, in Iran and other regions of the world has special rules that are essential for exporting companies to know.


One of the important rules for exporting caviar to European Union member states is that according to the Swiss Convention for the Protection of Endangered Species, it is only possible to buy farmed caviar in world markets.


To go through these steps, companies must obtain permits such as veterinary permit, CITES permit, transport permit, and certificate of origin from the Chamber of Commerce. Having these licenses is enough to export to most countries.


But Japan and Canada are more sensitive to the import of caviar, and it must be proven that the producer of this nutrient has only used pure edible salt (NaCl) as a preservative. Of course, most European countries are not sensitive in this regard and the producer can also use impure salts of boric acid to make caviar last longer.
