Kashk o bademjan (Persian: کشک و بادمجان‎) or kashk-e bademjan (Persian: کشک بادنجان‎) is an Iranian dish, that literally translates in Persian as “kashk and eggplant”. It can be considered either an appetizer or a main dish. There are various recipes for this dish, involving caramelized onions, roasted nuts, herbs and spices. The spelling of the name of this dish varies, such as: kashk-e bademjan (reflecting literary Iranian Persian), kashk e badamjan (similar but Afghan Persian or Dari), kashk-e bademjoon (reflecting a colloquial Iranian accent), and kashk bademjan. kashk-e bademjan is a simple and delicious food that can be served both cold and hot, and due to the presence of curd, it has health and hair healing properties, as well as stimulating the appetite. First, to prepare this delicious and excellent dish, you have to peel the eggplants and leave them in the water and salt for about half an hour. Then fry them in oil. Peel an onion, grate it and put it in a frying pan with some oil over medium heat and let the onions caramelize. After the onions are slightly fried, add the turmeric and black pepper to the onions and stir until the turmeric color is completely absorbed by the onions. After adding and frying the turmeric and hot onion, it is time to mash the fried eggplants. Add to your hot onions and stir and add the garlic to these ingredients and stir. Then add the dried mint to these ingredients and stir until well combined. After you have roasted these ingredients together, it is time to add the curd. You can also add the curd after it is ready. This is a matter of taste. And if you want, you can add some salt to it. After this, add a quarter of a cup of water to your eggplant curd and stir, then leave the lid to cook for about a quarter with the lid closed and medium heat. Add your walnuts to it. When your dish is ready, you can pour it into a bowl and decorate the curd with hot mint.
